This flakey appetizer is made with fresh or leftover corned beef, crescent rolls, cheese, sauerkraut, and creamy thousand island dressing.

What is a Reuben Cresent Roll?
A Reuben crescent roll is a twist on the classic Reuben sandwiches or Reuben sliders we all know and love.
Simply put, all the ingredients you know and love in the classic recipe and put together and rolled in crescent dough, and baked until they are that perfectly flaky golden brown.
This Reuben crescent roll is a great recipe to serve for st. patrick’s day … or any time of year when you are craving corned beef, as a game day appetizer, lunch to share with friends, or to bring to a pot-luck.

What is a Cresent Roll?
If you are familiar with this Philsbury brand, you are probably familiar with a crescent roll. However, if you are unfamiliar, crescent rolls are crescent-shaped flakey rolls made with refined flour and depending on what your plans are, can be filled with meat, cheese, and more.
For some American families, these are a staple on the dinner table, especially around the holidays.
Now, I know what you might be wondering … are crescent rolls the same as croissants?
Although the two are similar, they are not the same. Croissants are more of a bakery dessert or more of a puff pastry. Crescent rolls have more of a homemade roll/bread texture to them.

Ingredients for making a Reuben Bake
Meat: For this recipe, I used 8 oz of leftover corned beef. Don’t have leftover corned beef? That is okay! You can make this recipe with fresh corned beef as well.
Dough: To make the ring of this roll, you are going to need 1 tube of crescent roll dough from Pillsbury. Looking to make more than one crescent ring? Grab a second tube of crescent dough from the store and double the recipe.
Cheese: One of the classic and staple ingredients of a Reuben is cheese. So for this, we are going to use 8 oz of shredded swiss cheese.
Sauerkraut: Another essential ingredient in a Reuben is the cabbage or sauerkraut. In this recipe, we are going to use ½ cup of Sauerkraut.
Seasoning: 1 tbsp of caraway seeds. Caraway seeds help in the fermentation process of the sauerkraut.
For Dipping: ½ cup of Thousand Island Dressing.

How to Make Corned Beef Reuben Crescent Roll
Preheat. Preheat the oven to 400 Degrees F
Cut corned beef. Cube up leftover corned beef and pulse in a food processor until chopped up evenly. Alternatively, you can use a knife and chop by hand.
Prep pan and rolls. Place a sheet of parchment paper on a sheet pan and place a 3-inch bowl in the center. Open up the crescent rolls and place the wide end next to the bowl with the points out to look like a sun or starfish.
Layer and spread Ingredients. Once the crescent rolls are fanned out around the bowl spread out a layer of Swiss cheese, followed by corned beef, Saurkraut, and another layer of Swiss.
Fold and Press. Remove the bowl from the center then take the points of the crescent rolls and fold them over the filling. Press the edges and form the ring.
Bake. Spray with cooking spray or butter on the crescent rolls and sprinkle on the caraway seeds. Bake for 15 minutes until golden brown then place the bowl back in the center of the ring and fill with thousand island dressing.
Serve. This is the last step! Once you are ready to serve your Reuben crescent roll, fill the bowl with thousand island dressing for dipping and enjoy!

Storing Leftover Crescent Roll
Even though this recipe is easily a HUGE hit, sometimes even the best of recipes leave us with leftovers.
Grab your favorite air-tight container and toss your leftovers in.
Your leftover Reuben crescent rolls will last in the fridge for about 2-4 days.

Heating Up Leftovers
When heating up leftovers, you have a few options:
- Microwave: You can toss them in the microwave with a damp paper towel over them for a few seconds.
- Oven: Pop them in the oven at 300 degrees Fahrenheit for 6-8 minutes minutes.
- Air Fryer: Heat them up quickly in your air fryer for 5 minutes or less.

Recipe Variations
There are so many ways to change up this recipe to keep things fresh or different for example you can:
- Swap out the thousand island dressing with some pickle slaw (made with chopped pickles) , or serve it on the side!
- Make it crowd friendly and instead of making it a ring, make mini Reuben croissants with the crescent rolls.
- Make Reuben bites by putting the crescent rolls into a muffin tin adding the ingredients folding it closed and baking.
- Boost the caraway flavoring by kneading in caraway seeds into the dough.
- Go really different and make this same recipe with a completely different sandwich inspiration and ingredient base.

What is Russian Dressing?
Another great dipping sauce for your Reuben rolls is Russian dressing.
Russian dressing is made with finely chopped onion, mayonnaise/mayo, ketchup or chili sauce, horseradish, hot sauce, Worcestershire sauce, paprika, and finely ground sea salt.
