Ingredients
For the Steak:
- 1 pound flank steak (or skirt steak)
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- Juice of 1 lime
For the Elote (Mexican Street Corn):
- 2 ears of corn, grilled and kernels removed (or 2 cups frozen corn, thawed and grilled)
- ¼ cup mayonnaise
- 2 tablespoons sour cream
- ¼ cup crumbled cotija cheese (or feta)
- Juice of 1 lime
- 1 teaspoon chili powder
- 2 tablespoons cilantro, chopped
For the Tacos:
- 8 small corn or flour tortillas, warmed
- 1 avocado, sliced (optional)
- Extra crumbled cotija cheese, for garnish
- Cilantro leaves, for garnish
- Hot sauce, for serving
Instructions
Step 1: Marinate the Steak
- In a small bowl, whisk together olive oil, chili powder, smoked paprika, garlic powder, ground cumin, salt, black pepper, and lime juice.
- Place the steak in a shallow dish or resealable plastic bag and pour the marinade over it.
- Let the steak marinate for at least 30 minutes (or up to 4 hours) in the refrigerator.
Step 2: Grill the Steak
- Preheat a grill or grill pan over high heat.
- Remove the steak from the marinade and grill for 4–5 minutes per side for medium-rare, or until your desired doneness.
- Let the steak rest for 5–10 minutes before slicing it thinly against the grain.
Step 3: Prepare the Elote (Mexican Street Corn)
- Grill the corn ears over medium-high heat until lightly charred, turning occasionally. If using frozen corn, grill the kernels in a skillet.
- In a mixing bowl, combine mayonnaise, sour cream, cotija cheese, lime juice, chili powder, and cilantro.
- Stir in the grilled corn kernels until fully coated.
Step 4: Assemble the Tacos
- Place a few slices of grilled steak in the center of each warmed tortilla.
- Top with a generous spoonful of the elote mixture.
- Add sliced avocado, extra cotija cheese, and a sprinkle of fresh cilantro.
- Serve with a squeeze of lime and your favorite hot sauce.
Tips for Perfect Steak Elote Tacos
- Char Your Tortillas: Lightly grill or toast the tortillas over an open flame for added flavor.
- Adjust the Heat: Add jalapeños or hot sauce to the elote mixture for extra spice.
- Prep Ahead: Marinate the steak and prepare the elote mixture in advance to save time.
- Swap Proteins: Try these tacos with grilled chicken, shrimp, or even portobello mushrooms for a twist.
Serving Suggestions
- Pair these tacos with Mexican rice, black beans, or a side of guacamole and tortilla chips.
- Serve with a refreshing margarita or agua fresca for a complete fiesta.
These Grilled Steak Elote Tacos are bursting with bold flavors and textures, from the juicy steak to the creamy, tangy elote topping. Whether it’s Taco Tuesday or a weekend barbecue, these tacos are sure to impress. 🌮✨
