Ingredients:
- 2 salmon fillets
- 6 large shrimp, peeled & deveined
- 8 oz fettuccine pasta
- 2 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken or seafood broth
- ½ cup grated Parmesan cheese
- ½ tsp red pepper flakes (optional)
- 1 tsp Italian seasoning
- ½ cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- Salt & black pepper, to taste
- Fresh parsley, for garnish
Instructions:
1. Cook the Pasta:
- Bring a pot of salted water to a boil and cook the fettuccine according to the package instructions, until al dente.
- Drain the pasta and set it aside.
2. Sear the Salmon & Shrimp:
- Heat olive oil in a pan over medium-high heat.
- Season the salmon fillets with salt, pepper, and Italian seasoning.
- Sear the salmon for 3-4 minutes per side until golden and flaky. Once done, remove and set aside.
- In the same pan, cook the shrimp for 1-2 minutes per side until pink and cooked through. Remove and set aside with the salmon.
3. Make the Creamy Tuscan Sauce:
- Lower the heat to medium and melt butter in the same pan.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Stir in sun-dried tomatoes and red pepper flakes (if using) and cook for another 2 minutes.
- Pour in broth and heavy cream, stirring well to combine. Let it simmer for 2 minutes to allow the flavors to meld.
4. Combine & Finish:
- Stir in Parmesan cheese and let it melt into the sauce, followed by the spinach. Continue stirring until the spinach wilts into the sauce.
- Add the cooked pasta to the pan and toss to coat it thoroughly in the creamy sauce.
5. Serve & Enjoy:
- Top the pasta with the seared salmon and shrimp. Garnish with fresh parsley and additional Parmesan cheese for extra flavor.
- Serve with a crisp white wine for the perfect pairing!
