Ingredients:

  • 2 salmon fillets
  • 6 large shrimp, peeled & deveined
  • 8 oz fettuccine pasta
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken or seafood broth
  • ½ cup grated Parmesan cheese
  • ½ tsp red pepper flakes (optional)
  • 1 tsp Italian seasoning
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • Salt & black pepper, to taste
  • Fresh parsley, for garnish

Instructions:

1. Cook the Pasta:

  • Bring a pot of salted water to a boil and cook the fettuccine according to the package instructions, until al dente.
  • Drain the pasta and set it aside.

2. Sear the Salmon & Shrimp:

  • Heat olive oil in a pan over medium-high heat.
  • Season the salmon fillets with salt, pepper, and Italian seasoning.
  • Sear the salmon for 3-4 minutes per side until golden and flaky. Once done, remove and set aside.
  • In the same pan, cook the shrimp for 1-2 minutes per side until pink and cooked through. Remove and set aside with the salmon.

3. Make the Creamy Tuscan Sauce:

  • Lower the heat to medium and melt butter in the same pan.
  • Add the minced garlic and sauté until fragrant, about 1 minute.
  • Stir in sun-dried tomatoes and red pepper flakes (if using) and cook for another 2 minutes.
  • Pour in broth and heavy cream, stirring well to combine. Let it simmer for 2 minutes to allow the flavors to meld.

4. Combine & Finish:

  • Stir in Parmesan cheese and let it melt into the sauce, followed by the spinach. Continue stirring until the spinach wilts into the sauce.
  • Add the cooked pasta to the pan and toss to coat it thoroughly in the creamy sauce.

5. Serve & Enjoy:

  • Top the pasta with the seared salmon and shrimp. Garnish with fresh parsley and additional Parmesan cheese for extra flavor.
  • Serve with a crisp white wine for the perfect pairing!
